Plan and prepare!
I can’t stress how much time this will save you in the kitchen, eat a vegan meal once a week and spend an hour or two grocery shopping. Now prepare all the vegetables. Don’t be afraid to eat healthy
Being a vegan doesn’t mean you have to do everything from scratch. I use a pack of quick ramen to bulk up soup, add lots of veggies and tofu for a creamy soup on lazy nights, or use a packet of vegan mac and cheese to add chopped greens, greens, etc. I’m not sure if I’m going to be able to do that.
